Pulled Pork Sandwich with coleslaw
Pulled Pork BBQ Spice Blend
Ingredients:
Rub- 2 tbsp brown sugar
- 2-3 tsp Pulled Pork BBQ Spice Blend
- 1.5 - 2.2kg boneless pork shoulder roast
- 1/2 cup apple cider or vegetable
BBQ Sauce
- 3/4 cup pork juices from slow cooker, once cooked
- 2 cups ketchup or tomato sauce
- 1/3 cup apple cider vinegar or balsamic vinegar
- 1/2 cup brown sugar
- 1 tsp Pulled Pork BBQ Spice Blend
- 1 tbsp Worcestershire sauce
Serving:
- 3 cups of coleslaw
- 8 bread rolls
Instructions:
- Mix together Pulled Pork BBQ Spice Blend and brown sugar, then rub all over the pork.
- Place in a slow cooker and pour over apple cider or stock. Slow cook for 8 hours on low or 6 hours on high.
- Remove pork from liquid and place into a deep dish or pan. Reserve liquid.
- Shred pork with 2 forks. It should be fall apart tender. Remove any excess fat as needed.
- Toss in the BBQ sauce and use as much as you like and/or reserve some for serving.
BBQ Sauce:
- Place all ingredients in a medium pan over medium heat and whisk. Bring to boil, then turn down the heat to simmer. Cook for 1 hour. Remove from stove and use as per recipe.
