Mexican Beef Street Tacos

Makes 4 servings

Ingredients

- 2 tbsp soy sauce
- 2 tbsp lime juice
- 2 tbsp cooking oil, divided
- 2 tbsp Traditional Taco Spice Blend
- 750 g flank steak, cut into 1.5 cm pieces
- 12 mini flour tortillas, warmed
- 1 red onion, diced
- Coriander leaves, fresh, chopped
- 1 lime, cut into wedges


Optional Extras:
- Corn, niblets
- Tomatoes, diced
- Red capsicum, diced

Instructions

  • In a medium bowl, combine soy sauce, lime juice, 1 tbsp cooking oil, Traditional Taco Spice Blend.
  • In a large bowl, combine soy sauce mixture and steak. Marinate for at least 1 hour, and up to 4 hours, turning the steak occasionally.
  • Heat remaining 1 tbsp cooking oil in a large pan over medium high heat. Add steak and marinade, and cook, stirring often, until steak has browned and marinade has reduced - about 5-6 minutes, or until desired doneness.
  • Serve steak in tortillas, topped with onion, chopped coriander leaves, any optional extras and lime juice.
