Coconut Curry with prawns
Coconut Curry Spice Blend
Aromatic and rich coconut curry with prawns will become your favourite
Ingredients:
- 3 garlic cloves, minced
- 2 tbsp Coconut Curry Spice Blend
- 1 tbsp vegetable oil
- 1 tbsp tomato paste
- 1 tomato, finely chopped
- 1 cup coconut cream
- 1 cup chicken stock
- 400g peeled and deveined prawns
- 200g green beans and broccoli or snap peas
- sea salt
- coriander leaves, to serve
- warm roti or naan bread, to serve
- Heat the oil in a wok or saucepan over medium heat. Add the garlic and cook, stirring for half a minute. Then add the Coconut Curry Spice Blend and tomato paste, stir for another half a minute. Add the tomato and cook for another 2 minutes to allow the tomato to soften. Then add the coconut cream, beans and chicken stock. Simmer for about 15 minutes.
- Add the prawns and cook for 5 minutes or until the prawns are cooked through. Season with salt to taste.
- Serve topped with coriander and bread on the side.
