Coconut Curry Pumpkin Soup
Coconut Curry Spice Blend
Ingredients:
- 1kg diced pumpkin
- 2 large sweet potato diced
- 1 litre of veggie or chicken stock
- 2 teaspoons Tastebuds Coconut Curry Spice Blend
Instructions:
- Put all ingredients in to a large pot and boil on medium to high until the pumpkin is soft.
- Remove from heat, use blenders or a stick mixer and whisk.
- Taste and add extra spice mix if you like extra flavour.
- Spoon in to a bowl. Add a dollop of Greek yoghurt and a sprinkle of Tastebuds Tropical Smoked Salt or Mediterranean Salt.
